Okonomiyaki are traditional Japanese street food, and are just as easy to make at home as they are delicious! They consist of shredded and battered vegetables that are fried to a crisp and enjoyed with a variety of dipping sauces. You can swap out vegetables as they come in and out of season to work with what you already have in the fridge. Enjoy!
Ingredients - Yield: 4 Servings
For the Sauce
1/2 cup of Ketchup
Splash of Soy Sauce
Splash of Worcestershire Sauce
For the Pancakes
1 cup of All-Purpose Flour
3/4 cup of Water
3 Eggs
2-3 cup of Shredded/Finely Chopped Vegetables (Cabbage, Carrot, Onion, Broccoli Stalks)
1 1/2 TBSP of Cooking Oil
Toppings (Optional)
Chopped Green Onions (optional toppings)
Sesame Seeds (optional toppings)
Kewpie Mayo (optional)
Directions:
1. Stir together sauce ingredients until smooth. Adjust to taste. Set aside.
2. Mix together flour and water in a large bowl, then whisk in eggs.
3. Stir in veggies (they should be cut to a similar size as coleslaw mix).
4. Heat oil on a griddle or skillet.
5. Pour batter into hot pan to make 1 pancake (~6" diameter, 1/2" thick).
6. Cook both sides on medium-low heat until golden brown (5-7 minutes).
7. Repeat as needed until all pancakes are cooked. Cover with your favorite sauce and toppings and enjoy!
