This blend is probably not used the way you think it would be. Boston Butt is a cut of pork that has nothing to do with Boston and it isn't even from the butt of a pig. It is actually the butt end of a shoulder cut. This is the cut you would use for pulled pork. So what's with the OTR in the name? Our original store is located in a historic area of Cincinnati called Over the Rhine. The area was originally populated by first generation Germans. A branch of the Erie canal came through Cincinnati and cut across the center of town. The German population reminiscing about their native land, said that crossing the many bridges that spanned the canal reminded them of crossing the Rhine river. Over time the name stuck.
The blend consists of paprika, salt, sugar, chili powder, black pepper, ancho chili, onion, garlic, and white pepper.
This is a famous flavor style created in the Cincinnati area using brown sugar and ancho chili’s. It goes great on a nice smoked brisket, smoked pork butt. Also a good base for a homemade barbecue sauce when paired with ketchup or tomato paste.
