We have been pickling to preserve food for centuries. Once the fall harvest takes place, we have so much food available to us. In the days before large supermarkets, we used pickling as one of the ways we preserved our food for the winter. This is a very simple but delicious pickling spice uses flavors that we are more accustomed to than it's cousin the Old World Pickling Spice. It is made using: coriander, mustard, peppercorns, bay, fennel seed, allspice, and chili powder.
